Although summer days are coming to a close, we can continue to enjoy fresh, sweet California strawberries for months to come! I’ve come up with a fun twist to a Mexican restaurant favorite: Tostadas! My Strawberry and Corn Tostadas with Lime and Cotija cheese are a little sweet, a little tangy, and A LOT delicious. They’re quick to make and look gorgeous when set out on your dinner table!

Unlike typical restaurant fare, my recipe keeps the calories and sodium low and the nutrition high. Each tostada clocks in at just over 100 calories and less than 50 milligrams of sodium each. Strawberries contribute a good amount of vitamin C and fiber to this dish, and the variety of vegetables combined in with them, add extra nutrition including protein, folate and iron. In this recipe, the tostada shells are baked instead of fried, then topped with skillet-blistered corn mixed with green chilies, diced fresh strawberries, and cucumbers. Splash some fresh lime juice and crumble a little cotija (or feta cheese) over the top and you’ve got yourself one tasty, meatless and budget friendly meal! So much flavor stacked onto a light and crispy tortilla shell. YUM!
